Salad of gizzards and smoked duck Breast

Ingredients:

  • 380g duck gizzards confit – CHEVALIER GASTRONOMIE
  • 1 smoked duck fillet – CHEVALIER GASTRONOMIE
  • 1kg of duck breasts cooked in fat – CHEVALIER GASTRONOMIE
  • 300 g mesclun and lamb’s lettuce
  • 16 cherry tomatoes
  • 1 egg
  • 1 generous handful of walnuts
  • Croutons
Preparation:

Wash and drain the salad mix and the lamb’s lettuce.

Wash the tomatoes and halve lengthways. Season lightly.

Brown the gizzards and duck breasts for a few minutes in a hot pan without oil.

Thinly slice the smoked duck fillet.

Place the salad mix and lamb’s lettuce, tomatoes, walnuts and croutons on each plate. Then arrange the slices of smoked fillet, gizzards and duck confit.

All set! Serve quickly. At the table, season with the vinaigrette.
