Burgers with Pulled duck Meat

Ingredients:

  • Pulled duck meat – CHEVALIER GASTRONOMIE
  • 4 nice slices of Appenzeller cheese
  • 4 burger buns
  • 4 small shallots
  • 2 tbsp of maple syrup
  • 8 cooked and warm grenaille potatoes, sliced
  • 2 minced hearts of sucrine lettuce
  • 4 sliced tomatoes
  • 2 tbsp of ketchup
  • 2 tbsp of mustard
  • Pepper
Preparation:

In a frying pan, pour a small drizzle of oil and sweat the minced shallots.

Add the pulled meat to the shallots and stir the mixture. Add maple syrup and cook for 8 min on low heat. Pepper to taste.

Using a bread knife, cut the burger buns into two halves and toast them for 2 min.

In a small bowl, mix 1 tbsp of ketchup and 1 of mustard.

Spread this mixture on the bottom of the burger buns, add the sucrine lettuce on each, then the slices of grenaille potatoes, the lightly pressed duck pulled meat.

Carefully place the tomato slices and the Appenzeller cheese slices, close with the top bun, and enjoy immediately.
